Hi again! Welcome back to another exciting chapter in our series of uncommon ingredients.
Whilst all of my other ingredients have been either a vegetable or a herb, I thought of changing the track a little bit and highlight this particular ingredient that plays a crucial role in the food industry and offers a myriad of benefits.
My first ever encounter with this ingredient was when I was at my Internship. Neither was I familiar with this ingredient nor did I know about its thick, viscous texture. And following that was probably a mistake no one would want to do, I put my bare hands in to scoop it out. Trust me it was as annoying as it sounds. Probably spent an hour washing it off! Either way, let's delve into this blog and learn something new today!
Liquid Glucose, also known as glucose syrup, is a baker's secret weapon that adds a touch of culinary magic in a wide array of baked goods. It is a thick, viscous syrup made from the hydrolysis of starch. It consists mainly of glucose molecules, with small amounts of sugar and other impurities. This translucent and sweet substance is derived from various sources such as corn, potatoes, wheat and rice.
Liquid glucose acts as a natural sweetener, and its unique properties make it highly desirable in the food industry. It is commonly used in confectionery, bakery products, and beverages to enhance sweetness, texture, and moisture. From candies and chocolates to frostings and ice creams, liquid glucose lends its unique touch to a wide range of delectable treats.
As crystallization can be a common challenge in sugar based products, liquid glucose helps in preventing it and resulting in smoother textures. Because of its thick and sticky texture, it also serves as an excellent binding and thickening agent in many recipes. It helps in improving the texture and elasticity of products like fruit preserves, jellies and sauces.
This ingredient also as hygroscopic properties, meaning it attracts and retains moisture. This characteristic is particularly beneficial in baked goods, preventing them from becoming dry and stale and simultaneously extending the shelf life of products by inhibiting the growth of microorganisms.
Liquid glucose has been a staple in various recipes and food applications, but there are several alternatives for those seeking several different sweetening options. One common substitute is corn syrup, which shares similar properties and can be used interchangeably in most recipes. For those looking for natural alternatives, honey and maple syrup have proven to be excellent choices, adding unique flavors and nutrients to the dishes. Lastly, agave nectar that has derived from the agave plant is a vegan alternative.
No sweetener is without controversies and liquid glucose is no exception. One of its primary concerns is its association with increased sugar consumption and potential adverse health effects, particularly when used in processed foods and beverages. Some health experts argue that excessive consumption of liquid glucose may contribute to obesity, diabetes, and other metabolic disorders. Additionally, liquid glucose, which is often derived from corn starch, has been criticized due to its relation with genetically modified foods (GMO) and the environmental impact of large scale corn production. As for any sweetener, moderation is key, and individuals are encouraged to be mindful of their overall sugar intake and opt for natural, less processed sweeteners when possible.
Tip: Always apply oil on your hands before scooping out liquid glucose. This will prevent it from sticking to your hands.
