Hi again! Welcome to another blog and a new ingredient. It's about time I kill your curiosity and introduce you to our topic for today. This particular ingredient caught my attention and at first, by the sound and looks of it I thought Sunchokes are possibly a family of artichokes or even ginger but what is it really? Well I am thrilled to let you all know about this ingredient and hopefully convince you as to why Sunchokes deserves a prominent place in your kitchens. 

Funnily, when I heard that there is an ingredient called Sunchokes or even its other name, Jerusalem Artichoke, I most definitely expected an exotic Middle Eastern Vegetable that looked completely different. But lo and behold, these tubers are knotted root vegetables belonging to the sunflower family and are native to North America. They look similar to ginger on the outside and more like potatoes on the inside.  Well it was definitely a case of mistaken identity for me yet it definitely proves that nature always amazes us in one way or another. 

When eaten raw, they have a refreshing crunch and a slightly sweet, nutty taste similar to that of water chestnuts. On the contrary when cooked, they transform into a delicate blend of artichoke hearts with hints of earthiness and sweetness. 

I feel like Sunchokes are secret agents of the culinary world. They can effortlessly sneak their way into various dishes, adding unique twists. Whether you're roasting them to crispy perfection, blending them into a velvety soup, or tossing them in a vibrant salad, Sunchokes definitely elevate the flavor game.

Apart from these advantages, Sunchokes are a great addition to your healthy diet. They are a great source of iron, potassium, calcium, magnesium and potassium. It is a low calorie vegetable and also a considerable replacement for starchy vegetables like potatoes. 

Sunchokes are rich in inulin. As a result of its ability to resist being broken down into simple sugars, the inulin found in sunchokes aids in controlling blood sugar levels and preventing fatty liver. Replacing potatoes with sunchokes helps in reducing the starch component, in addition to having a low glycemic index and having a pleasantly sweet flavor making it a healthy meal option for people with diabetes. 

When looking for good quality sunchokes, seek for ones that have a firm, smooth skin with no green patches or sprouts. Large sunchoke roots with few ridges are simpler to use and also better for roasting. It is beneficial to store it in a well ventilated cool and dry space away from direct sunlight. Be sure to not wash it until you are ready to use it or else its skin can be easily contaminated by mold (a clotting or discoloration caused by fungi).

And lastly for those with a keen interest in gardening, sunchokes are an absolute delight to grow. They are like the "Jack and the Beanstalk" of the vegetable world, with towering stalks and bountiful tuber underground. Here are some tips if you ever consider growing them:
  • Sunchokes can be sown in the garden as soon as two to three weeks before the typical last frost date in spring.
  • They thrive on soil that has warmed to 50°F (10°C).
  • Sunchokes can also be grown in warm-winter regions and must require 110 to 150 days to reach harvest.
  • Plant it in full sun and preferably in loose, well drained soil. 
  • Plant the Jerusalem Artichokes in a separate bed; once established they tend to spread quickly and may need considerable work to eradicate. The spread can be controlled by root barriers.
